It feels extremely Paris at its core, in a very specific way: fashion Paris, lunch Paris, terrace Paris. Set on Place du Marché Saint Honoré in the 1st arrondissement, Daimant plays to the square like a local: you come for a table outside, you stay because the room has the confidence of a stylish address that expects you to look up from your phone.  Behind the project is restaurateur Alice Tuyet, with executive chef Erwan Crier shaping a menu that treats vegetables with the technique and swagger usually reserved for Sunday roasts.  The house talks about a “rotisserie” spirit, and that is the right cue: seasonal plates built around caramelisation, char, and sauces with real depth, served in a setting that reads like a maison rather than a canteen.  It is Paris through and through, but not the postcard version. It is the Paris that dresses well, eats late, likes a good square, and expects a restaurant to have a point of view.
