Chef Stéphane Modat, born in Catalonia and now one of Québec’s defining culinary figures, has transformed a historic townhouse into a deeply personal expression of northern cuisine. There is something wonderfully unexpected about a Catalan chef becoming one of the strongest ambassadors for Québec’s boreal traditions, yet Modat approaches the region’s ingredients with the enthusiasm of a man who genuinely spends time in its forests and rivers rather than merely talking about terroir over imported olive oil. That connection becomes obvious the moment you enter. Beneath the upstairs dining rooms lined with hunting and fishing trophies, a glass fronted kitchen hums with precision. In another restaurant the décor might feel performative. Here it reflects the chef himself, an avid hunter and fisherman whose menu draws directly from the landscapes he explores. Arctic char, smoked salmon, seaweed and even seal pay tribute to the culinary traditions of Salluit, the northernmost village in Québec. It is rare to find a Michelin starred restaurant willing to place such distinctly northern ingredients at the centre of the experience without softening them for international expectations. The cooking remains elegant throughout. A medallion of grain fed veal with porcini, butternut squash and nettle arrives with remarkable balance, grounded in Québec’s forests while still carrying the technical precision of Modat’s French training. After wandering through the fortified streets of Old Québec, Le Clan feels like stepping into the contemporary identity of the province rather than a polished historical reconstruction. Even the name hints at its philosophy: gathering people around food, storytelling and shared traditions. Conveniently, it also sounds exactly like the kind of place where someone might discuss Arctic fishing expeditions over spruce infused cocktails by candlelight. Which, here, feels entirely plausible.
