Lilou and the Return of Old Hyères

  • Design rooted in old Hyères.
  • An intimate courtyard pool.
  • A standout food and wine programme.
  • 37 rooms
  • Hyères city centre, by the old town

Hyères was attracting fashionable winter visitors long before the Riviera became synonymous with summer. Lilou takes its cues from that older chapter rather than from beach club Provence. Paris studio Haddou Dufourcq studied the town’s nineteenth century villas and hotels, then translated those references into 37 rooms with scalloped openings, cork floors, rattan, pale tiles and warm timber. Jean Pierre Blanc of Villa Noailles curated the art, strengthening a connection with Hyères that runs deeper than decoration.

The public rooms continue the same language with rattan, palms, warm wood and pale stone, polished enough to feel considered but never grand. The scale remains pleasantly domestic. Rooms are bright and carefully composed, bathrooms have an almost old fashioned simplicity, and the enclosed courtyard pool feels like a private garden with very good taste. If available, choose one of the few rooms with a terrace or balcony. The Junior Suite adds more space, a bathtub and sea view.

There is also good reason to stay for dinner. Chef Paul Émile Merlin brings Southeast Asian influences into Mediterranean cooking, while the cellar holds over 550 references and won La Revue du Vin de France’s Wine List of the Year in 2025. Bottles are priced unusually sensibly for the Côte d’Azur, with a fixed corkage fee.

Lilou sits in central Hyères, close to the old town and Villa Noailles. The sea is a short trip away rather than outside your window. In return, you actually stay in Hyères rather than simply beside it.
