In Miraflores, at Av. Mariscal La Mar 1285, Mayta feels like Lima’s modern dining room done right: warm woods, soft lighting, a long bar that invites a pisco detour, and enough greenery to hint at the Amazon without turning dinner into a theme park.  Chef Jaime Pesaque founded Mayta in 2008, then gave it a major reboot for its 10 year mark in 2018, moving into new premises and sharpening the whole idea into contemporary Peruvian cooking with serious technique and very readable flavours.  His Mayta Experience tasting menu is built around Peruvian ingredients, sometimes with playful precision: corn with chullpi and quinoa flower, ribs with potatoes plus cushuro and chincho, even paiche shaped into a rose that somehow looks calmer than it tastes.  Mayta is called “Noble Land” in Aymara, which fits: this is Peru edited, not diluted.
