In the 12th century, Carthusian monks settled here, planting vines and olives with the kind of foresight that today’s real estate developers would envy. The former monastery has been carefully reworked into a hotel where stone walls and timber beams meet a calm, contemporary aesthetic. Rooms are spacious, quietly luxurious, and just rustic enough to remind you that this was once a place of work and discipline, not indulgence. The real seduction lies outside. Vineyards roll out in every direction, framed by the dry, sculptural hills of Montsant. The pool seems almost strategically placed to make you cancel any plans you had for the afternoon.
