Van Oys Maastricht

Location & practical

Van Oys starts with restraint. The château is compact rather than grandiose, all warm brick, pale stone surrounds and a steep slate roof, with clipped gardens keeping the composition almost unnervingly tidy. Inside, the materials do most of the talking: heavy timber, vaulted rooms, pale stone, soft plaster and dark woods, handled with enough restraint that the old building never feels dressed for a costume drama.

That balance continues across the estate. SATIJNplus restored the château towards its appearance before 1848 and added a contemporary courtyard building inspired by the enclosed farmsteads of South Limburg. The former carriage house remains part of the ensemble, so moving around Van Oys means shifting constantly between old structure, regional references and very controlled contemporary design.

The same idea appears on the plate. At Maes, the cooking looks to the surrounding Meuse and Heuvelland landscape, with regional vegetables, trout, cheeses and mushrooms appearing alongside seafood from Yerseke. Create by Guido Braeken takes a more ambitious route, with two Michelin stars and the kind of precision that suits the architecture rather well.

What makes Van Oys tempting is that none of this needs to be consumed at museum speed. You can have lunch under the vaults, drift through the grounds, disappear into the spa, then return for dinner without ever feeling the need to “do” the place. The service is designed to feel polished rather than stiff, which matters here. A castle can become exhausting when everyone starts whispering.

This one is better when lived in for a night (or 2, or 3, or ... :) ).

Good to know.
